Christmas Pudding Truffles

This is a great way of converting leftover Christmas pudding into mini Christmas pudding canapés that make a wonderful New Year’s Eve nibble.

Prep time: 20 minutes/Cook time: 20 minutes/Makes: 20+ (+20 minutes chilling)

Ingredients:
Leftover Christmas Pudding
Cream sherry (or grape juice)
Plain Chocolate
White chocolate
Mint sprigs, to decorate

Method:
Heat some leftover Christmas Pudding in a microwave until just hot. Set aside until just cool enough to handle but not completely cold.

Crumble the still-warm pudding into a bowl and drizzle over a little cream sherry (or grape juice) to moisten. Melt some Plain Chocolate (either in a bain-marie or microwave); stir into the pudding until the mixture has a sticky consistency.

Roll 1 dessert spoon at a time of the mixture between wet hands to form round truffles. Set on a baking tray, transfer to your refrigerator and chill for 20 mins until firm.

Melt white chocolate and drizzle over each truffle. Decorate with mint sprigs and leave to set before serving.
