Touo is a classic okra and tomato stew from Niger that is typically served with thick cornmeal paste (pap).

Prep time: 20 minutes/Cook time: 25 minutes/Serves: 4

Ingredients
1 green bell pepper, de-seeded and chopped
2 onions, chopped
2 tomatoes, chopped
250g okra, washed and sliced into thin rounds
juice of 1 lime
80g cornmeal
salt, to taste
1 small chilli, finely chopped

Method:
Combine the bell pepper, chilli, onions in a saucepan over medium heat. Bring to a simmer and cook for 15 minutes before adding the okra and lime juice. Season to taste with salt.

Continue cooking for 10 minutes.

In a separate pan, combine the cornmeal with 400ml salted boiling water. Cook, stirring constantly, for about 10 minutes until a thick paste.

Take the cornmeal off the heat and pour into a dish to a thickness of 2-3cm. Set aside to cool, then cut into squares and serve with the vegetables.
