Complete salad with edible caterpillar

“Chitoumou” is the shea caterpillar (also known as the edible caterpillar), <em>Cirina butyrospermi</em>. Chitoumou are typically bought already prepared at the market. To prepare them, they are boiled with potash and then dried in the sun. This is a classic recipe from Burkina Faso that serves these edible caterpillars as a salad.

Prep time: 10 minutes/Cook time: 5 minutes/Serves: 4

Ingredients:
1 head of lettuce, leaves separated rinsed and drained
2 carrots, cut into strips with a peeler
2 onions, sliced into strips
Salt
3 tomatoes, sliced into strips
1 handful of prepared chitoumou (shea caterpillars)
2 tbsp of vinegar
3 tbsp vegetable oil
1 tsp mustard
1 spoonful of Jumbo Aroma (bouillon cube)

Method:
Arrange the lettuce leaves in the base of a salad bowl. Arrange the onion strips, tomatoes and carrots strips on top.

Arrange the chitoumou over the vegetables.

For the vinaigrette dressing pour the vinegar and oil into a bowl. Beat with a whisk until emulsified then blend in the Jumbo Aroma, a little salt and a teaspoon of mustard. Whisk to combine and serve with the salad.
