If you have some lamb mince, yoghurt and mint hanging around then you can have this delicious lamb burger on the table in less than half an hour. You can’t get a much speedier meal than that!
Prep time 10 minutes/Cook time 15 Minutes/Serves 4
Ingredients:
500g (1 lb) minced lamb
1/2 small onion, finely chopped
50g (2 oz) breadcrumbs
1 egg
1/2 tsp sea salt
2 tbsp fresh mint, finely chopped (or 1 tbsp dried mint)
For the Relish:
200ml (2/5 cup) Greek yoghurt
2 jam (Roma) tomatoes, finely diced
zest of 1 lemon, finely grated
2 tbsp fresh mint, finely chopped
2 spinach leaves, shredded
1 garlic clove, crushed
2 tsp white wine vinegar
1 tsp olive oil
salt and freshly-ground black pepper, to taste
To Serve:
4 burger buns
lettuce, sliced onion, tomato slices, cheese
Method:
Place the mince in a large bowl then mix in the onion, breadcrumbs, egg, salt and mint. Mix well to combine then divide into four and shape into burger patties. Sit on the plate then chill in the refrigerator until ready to cook.
Set a frying pan or skillet over medium heat, add the burgers and fry for 4-5 minutes per side, until nicely coloured and cooked through.
In the meantime, mix together the yoghurt, tomatoes, lemon zest, mint, spinach, garlic, vinegar and oil. Stir well to combine and season with salt and freshly-ground black peppers.
Toast your burger buns then set a salad on the base. Set a patty on top and cover with a cheese slice. Serve the burger with a little of the yoghurt relish on the side.
