Want a spectacular full-of-flavour pudding that’s still quick to make so you can focus on your special someone for Valentine’s Day… Well, this microwave pudding could be for you… three minutes to mix, a minute to cook and another minute to stand, ideal! The measurements are given for each mug.
Prep time 3 minutes/Cook time 2 minutes/Serves 2
Ingredients:
2 x 2 rounded tbsp self-raising flour
2 x ¼ tsp baking powder
2 x 1 rounded tbsp caster sugar or granulated sweetener
2 x 2 tsp cocoa powder
2 x 1 tsp vegetable oil
2 x 2½ tbsp skimmed milk
a few drops of almond or vanilla extract
2 x 40g (1 ½ oz) pitted cherries, defrosted if frozen
2 x 1 tbsp low-fat vanilla yogurt, to serve
a dusting of icing sugar
Method:
Spray a microwave-safe ramekin or mug with cooking spray. Combine the flour, baking powder, sugar, cocoa powder and a tiny pinch of salt in a bowl and stir to combine.
Add the oil, milk and almond or vanilla extract and mix again. Scrape into the ramekin and sit all but one of the cherries in the middle.
Transfer to you microwave and cook on high for 40-50 seconds (I cooked mine at 800W). Test the top with your fingertip – if it’s still a little underdone in the centre, cook for another 10 seconds, but don’t overcook it, as it will continue cooking once it’s taken out of the microwave. Set aside to stand for 1 minute.
To finish. top with the vanilla yoghurt and reserved cherry, and dust with icing sugar if you wish.
