Chalé is a basic everyday sauce from Ghanaian that, once made, can very easily be turned into a meal. Quick, simple and punchy, this recipe is perfect to make in large quantities for big batch cooking. Here I give you the basic recipe for chalé and show you how to very simply turn it into a meal with lamb chops and shaved spring onions.
Prep time: 10 minutes/Cook time: 20 minutes/Serves 4
Ingredients:
For the Chalé Sauce:
400g (14 oz) tin chopped tomatoes
2 tbsp tomato purée
1 onion, coarsely chopped
a thumb-sized piece ginger, grated
1 scotch bonnet chilli, de-seeded and shredded
3 garlic cloves
1 tbsp chilli flakes
1 tsp sea salt
For the Chops:
8 thin lamb chops (2 per person)
16 spring onions
Method:
Put all of the ingredients for the chalé sauce into a food processor and whizz until you have a smooth paste.
At this point you can freeze the sauce for later use, or cook it as below.
For a really quick meal, grill some lamb chops, heat the sauce in a pan. Divide the sauce between bowls, top with the chops and some shredded spring onions then serve.
