These heart-shaped Mediterranean tarts with tomatoes and goat’s cheese make a wonderful starter for your Valentine’s day meal.
Prep time 10 minutes/Cook time 25 minutes/Makes 6
Ingredients
175g (5 ½ oz) ready-rolled puff pastry
2 tbsp sun-dried tomato pesto
9 baby plum Tomatoes, halved
85g (1/3 cup) Soft Goats’ Cheese, crumbled
Thyme leaves, to garnish
1 tbsp garlic infused olive oil
Method:
Pre-heat your oven to 190C (170C Fan/380F/Gas mark 5). Using a heart-shaped cutter, cut out 6 pastry hearts, approximately 7cm (3 in) wide. Trace a border around each heart, approximately 1cm (1/2 in) from the edge, and 1mm (1/25 in) deep. Transfer the hearts to a lightly-greased baking tray.
Spread the pesto on the inner heart, layer on the sliced tomatoes, sprinkle with the goats’ cheese, drizzle with the garlic oil and top with thyme.
Transfer to your pre-heated oven and bake for 20 minutes, or until the pastry is crisp and golden and the cheese has melted.
