Microwave Caraway and Pomegranate Red Cabbage

For my husband, who really loves his red cabbage dish for Christmas this is a really great recipe as it can be prepared in the microwave, removing the hassle of having another pot on the stove. This is also a versatile dish as it works as an accompaniment to just about any meat dishes and most vegetarian main courses.

Prep time: 5 minutes/Cook time: 20 minutes/Serves: 6

Ingredients:
1 red cabbage (around 550g), finely shredded
65ml pomegranate juice
1 bay leaf
½ tsp caraway seeds, lightly crushed
2 tsp pomegranate molasses, to serve (optional)

Method:
Mix everything in a large heatproof bowl, except the pomegranate molasses, and season well.

Cover and cook on high for 10 mins. Stir, then cook for 10 mins more. Drizzle with the molasses, if you like. Will keep chilled for up to three days. Leave to cool first.
