Rooibos, the dried leaves of Aspalathus linearis, a broom-like member of the plant family Fabaceae (beans) that grows in South Africa’s fynbos biome. The leaves are used to make a herbal tea that is called rooibos, bush tea, red tea, or redbush tea. It has been used as a re-hydrating tea for thousands of years. This versioni, which can be served warm or cold, will help with your battle with a hangover. Great if you’ve over-indulged during the New Year festivities.

Ingredients:
5g loose-leaf rooibos
juice of 1/2 lemon
2 tsp runny honey
1 large flake of sea salt
1 strip lemon zest
Method:
Place the rooibos in a jug and pour over 300ml (1 1/4 cups) of just-boiled water. Set aside to infuse for five minutes then strain into a mug and add the lemon juice, honey and sea salt flake. Pinch the lemon zest over the tea so the lemon oil spritzes the surface and serve.
If you would like to serve the drink chillie, prepare the night before and chill in the refrigerator.
If you would like a bit of the hair of the dog, it can be turned into a hot toddy by adding 25ml (2 tbsp) rum to the hot rooibos tea.
You could use a rooibos tea bag, but the loose leaf tea just tastes so much better.
