Malian Ginger and Mint Drink

Ginger-based drinks are prepared throughout West Africa, typically made using the local red ginger (though it can also be made with white ginger). This Malian version combines ginger, mint and lemon juice.

Prep time: 20 minutes/Cook time: 10 minutes/Serves: 1

Ingredients:
3cm length of fresh ginger (or 10 red ginger roots)
10 fresh mint leaves
juice of 1/2 lemon
sugar, to taste
250ml (1 cup) water

Method:
Scrape the skin from the ginger then very finely grate (capture any liquid).

Combine the ginger, mint leaves, lemon juice and water in a blender. Process until smooth then sweeten to taste.

Serve chilled or over ice.
