A cheaper, but equally tasty alternative to angels on horseback, these garlic-flavoured bacon-wrapped scallops are a hit as party food and are great as a New Year’s Eve snack.

Ingredients:
14 scallop meats
sea salt
Freshly-ground black pepper
7 rashers streaky bacon, halved
2 tbsp unsalted butter
1 garlic clove, smashed
1 tbsp fresh thyme leaves
Lemon wedges, for serving
Method:
Pre-heat your oven to 220°C (425°F). Line a rimmed baking tray with foil.
Pat the scallops dry with kitchen paper then season to taste with salt and black pepper. Stretch out the halved bacon rashers with the back of a knife then wrap one bacon piece around the outside of each scallop. Secure with a toothpick, then transfer each prepared scallop to the baking tray.
Place a small frying pan over medium heat. Once hot, melt the butter, add the garlic and thyme leaves and cook, stirring for about 1 minute, or until fragrant. Spoon the butter and thyme mixture over the scallops (discard the garlic).
Transfer to your pre-heated oven and roast for about 15-20 minutes, until the bacon is crisp and the scallops are cooked through.
Carefully remove the toothpicks, transfer the scallops to a warmed serving plate, garnish with lemon wedges and serve.
