This is a grown-up treat ideal for Valentine’s day that can be kept for up to a month in the freezer.
Prep time 10 minutes/Cook time 15 minutes/Serves 8
Ingredients:
750ml (2 cups) Orange Juice with Bits (not from concentrate)
100g (1/2 cup) granulated sugar
Finely-grated zest 1 orange
1 tsp Angostura Bitters
50ml (1/5 cup) Aperol Aperitivo
200ml (4/5 cup) Prosecco Brut
Method:
Combine 150ml (3/5 cup) of the orange juice and the sugar in a small pan and bring to a boil. Reduce to a simmer and cook for 1 minute, stirring, until the sugar has dissolved.
Mix together the remainder of the orange juice, the zest and bitters. Transfer to a 1l plastic freezer-proof container and freeze for 6 hrs, or ideally overnight, until set.
Break up the frozen mixture with a spoon. Put in a food processor and blitz until smooth. Return to the container and freeze for at least 1 hour, until firm.
To serve, divide the Aperol and Prosecco between 2 shallow bowls. Place a large scoop of sorbet in the middle of each and serve immediately.
